This was listed for a long, long while; while a few other copies came & went, for far less. Do you think this genuinely sold (@ Buy-it-now) for $599 (~£373)?
2003.Folio Society Limited Edition Tolkien Silmarillion Leather Science Fiction
Nothing remarkable about the number or anything. Always curious as to why people just suddenly buy copies at this price when other copies have been available.

I recently won a copy on ebay for £235 plus postage. I don't think I would have paid this much. Maybe they needed to complete a set.
Recently there were both a Hobbit and an LOTR from this edition up for auction but the seller wouldn't post to Australia so he ended up selling the Hobbit for a lot less than I would have paid. Also, sets of all 5 books seem to sell for much higher prices than individual copies, presumably this has something to do with having matching numbers, something that's never worried me.

All of the Folio leather bound appear to be about £250 per book for sale, so £1250 is the going rate for all the items, £373 for one book is more than the going rate.
The matching numbers question is interesting, they did not come out at the same time, so how did you get matching numbers ?
Did the Folio Society facilitate this, if you bought one 1750 limited edition, they reserved the rest for you?
All these editions were limited to 1750 copies, a high limitation.

Yes, they did.

I don't know for sure (someone else will undoubtedly remember) --but it's perfectly possible.
I ordered a numbered signed book (totally unrelated to Tolkien collecting) last year. It was one of two (projected) volumes, but the second volume wasn't published until later in the year; a set, but not ever sold as a set. As part of the pre-publication ordering, for volume two, they asked if I wanted the same number as I had received for volume one --clearly they had noted what number I previously received. (Or, of course, one could simply request the lowest available number, if that way inclined! )
Folio could well have done this (--I can imagine them doing this); they're pretty good.
